This moment feels different.

When we were searching for our first location, it was hard.
Very hard.

We heard “no” many times.
Developers didn’t know us.
We had no name.
No track record.
No proof that we could actually build what we were talking about.

Some liked the idea.
Many didn’t believe it.
Most chose safer, more established brands.

Getting our first location was a fight.

How the conversation has changed

Today, the conversations sound very different.

When we meet with developers now, we don’t meet in an empty office or over a pitch deck.

We met in our first café at Wiggins Pass.

They see the space.
They feel the atmosphere.
They watch guests.
They taste the coffee and pastries.

And suddenly, the conversation shifts.

Instead of us trying to convince someone to give us a chance, developers are asking if we would consider opening three:sixteen in their projects.

That change didn’t happen overnight.
It came from execution, consistency, and time.

Our next location: midtown bonita

We’ve officially signed a lease for our next location in a new development called Midtown Bonita.

The building itself is scheduled to be completed in May 2026.
However, our option to take possession of the space is set for November 1, 2026.

That timing is intentional.

Before we take the keys, we want to have all permits approved and ready.
Our goal is simple: take the keys and start construction immediately, without delays.

Free rent months and a clear plan

We negotiated several free rent months as part of the lease.

During that time, our plan is to complete the buildout — if everything goes as expected.

This allows us to:

  • reduce pressure during construction
  • focus on quality instead of rushing
  • start operations in a healthier position

Experience has taught us how important this phase is.

A much larger space

This location is significantly larger than our first one.

The total size is approximately 5,400 square feet. It also includes two small patios overlooking a pond.

The setting feels calm, open, and very different from a traditional strip plaza.

It’s also located very close to the i-75 freeway.

Why proximity to the freeway matters

When we travel as a family, we always look for interesting cafés close to the freeway.

Places where you can:

  • stop without driving deep into the city
  • take a break
  • reset
  • enjoy something genuinely good

We don’t think we’re the only ones who value that.

We believe this location will attract:

  • local guests
  • commuters
  • travelers passing through
  • people intentionally looking for something better than the usual options near highways

Design work is already in progress

Right now, we’re working with designers on the concept for this space.

It’s still early, but the focus remains the same:

  • intentional design
  • warmth
  • flow
  • comfort
  • and a strong connection to the surroundings

As the project develops, we’ll share:

  • concepts
  • decisions
  • challenges
  • and lessons along the way

Why this matters to us

This location represents more than just expansion.

It represents:

  • trust earned
  • credibility built
  • patience rewarded
  • and responsibility growing

We don’t take this lightly.

Every new location raises the standard for everything that comes after.

What’s next

There’s a lot of work ahead.

Permits.
Design.
Planning.
Decisions.
Mistakes.
Adjustments.

And we’ll share the process as it unfolds.

This blog exists for exactly that reason.
